Sweet Potato Bread

Recipe from Penzey's Fall 2011

INGREDIENTS
1 3/4 cups of flour
1 1/2 cups of sugar
1 1/2 tsp cinnamon
1/2-1 tsp ground nutmeg
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 cup mashed sweet potatoes
1/2 cup water
1 tsp vanilla sugar

DIRECTIONS
Preheat oven to 350.
In a large bowl combine the flour, sugar, cinnamon, nutmeg, baking soda, baking powder, and salt.
In a small bowl, combine eggs, sweet potatoes, oil, and water. Stir into the dry ingredients until just moistened.
Spoon into a greased and floured 9x5" loaf pan.
Sprinkle vanilla sugar over top of loaf.
Bake at 350 for 50-60 minutes or until toothpick inserted in center comes out clean.
Cool for 10 minutes before removing from pain to wire rack.
